Broccoli & Cheddar Quinoa Bites

Winner, winner, broccoli and cheddar quinoa bites for dinner (or lunch)!

Broccoli & Cheddar Quinoa Bites
Makes approximately 12 servings

Ingredients:
2/3 cup uncooked quinoa
1 cup water or stock
2 cups broccoli, chopped
2 cups cheddar cheese, shredded
1 tbsp grainy dijon mustard
2 eggs
2 tsp salt
2 tsp pepper
pinch of cayenne
Directions:
1// Preheat over to 350 degrees F.
2// Bring the quinoa and water to a boil. Reduce the heat, simmer until tender and water absorbed, about 15 minutes. Allow to cool.
3// Mix ingredients in large bowl. Spoon into greased muffin tin and bake until lightly golden brown on top, about 20 minutes.

  2. Mar these look amazing! I'm such a fan of quinoa and have been eating it for years, but I have yet to try it in any patty type recipe. I never knew it was so versatile. And cheese makes everything tasty :)
