Broccoli & Cheddar Quinoa BitesMakes approximately 12 servings
Ingredients:2/3 cup uncooked quinoa1 cup water or stock2 cups broccoli, chopped2 cups cheddar cheese, shredded1 tbsp grainy dijon mustard2 eggs2 tsp salt2 tsp pepperpinch of cayenneDirections:1// Preheat over to 350 degrees F.2// Bring the quinoa and water to a boil. Reduce the heat, simmer until tender and water absorbed, about 15 minutes. Allow to cool.3// Mix ingredients in large bowl.
