Morning is always such a busy time in my house. Get up, wash my face, make coffee, get dressed, do my hair/face, grab what I need for the day (making sure not to forget the coffee) and out the door I go. Because of the rush, one of my worst habits is skipping breakfast. I know, "the most important meal of the day".
This recipe for no bake energy bites has helped break this bad habit. These bites are so simple to make, with minimal mess and no baking, and with a yield of 3 dozen, will last the entire week. They pass the "healthy but taste delicious" test, and are perfect for anyone that needs to grab and go in the morning, such as myself. Enjoy!
No Bake Energy Bites
Yield: approx. 3 dozen
Ingredients:
1 cup oatmeal, uncooked
2/3 cup toasted coconut flakes
1/4 cup peanut butter
1/4 cup almond butter
1/2 cup ground flax seed
1/2 cup semi sweet chocolate chips
1/3 cup agave nectar or honey
1 tbsp chia seeds
1 tbsp vanilla extract
Directions:
1. Combine all ingredients in a bowl until thoroughly mixed. Cover and let chill in fridge for 30 minutes.
2. Once chilled, roll into bite-sized balls, approximately 1 inch in diameter.
3. Store in air-tight container in fridge for up to 1 week.
